Breakfast is a sticking point for many people who are used to their quick and easy cereals; unfortunately cereals induce a massive insulin response. So here are some simple ideas to get you started:
Two soft boiled Eggs with Asparagus Soldiers
Put 2 inches of water in a sauce pan and bring to the boil. Put in Asparagus for 30 seconds (longer is you don’t like them crunchy.
Meanwhile bring another sauce pan to the boil (2 inches of water) place your eggs in for 5 minutes. Serve eggs in egg cups and dip in your soldiers. Yum!
Scrambled eggs and salmon
Crack two eggs into a bowl and whisk until mixed. Add to a sauce pan and stir constantly until fluffy, add a touch of cream and stir some more. Serve with salmon and some cherry tomatoes.
Chop up anything you have (like mushroom, broccoli, leeks tomato, bacon and spring onion) and fry it in a pan on a medium heat. Whisk 2 eggs together with a little bit of cream. Spread your ingredients evenly in the pan and pour on your egg mix. Allow to cook until egg is no longer runny – fold and serve. (top tip add a bit of graded cheese before you fold- AMAZING).
